Aebleskiver (Danish Doughnuts)

Ingredients

2 c. flour

2 c. buttermilk

1/2 t. salt

2 eggs separated

1 T. sugar

1 t. baking soda

Directions

Mix flour, salt and sugar.
Beat together buttermilk and egg yolks, and add the flour mixture.
Add soda and fold in stiffly beaten egg whites.
Heat the pan and put melted butter or Crisco in each hole in pan.
Pour batter into hole, but do not quite fill them.
Place over low heat and turn quickly when half done.
Serve very hot with butter and sugar, maple syrup, or jelly and applesauce.
You eat these with your hand and dip first in the butter and then sugar or syrup.

Notes

This is a famous Danish recipe served every Sunday morning at Grandma Anne Rasmussens house in Ludington, MI. We used to try and see who could eat the most and keep Grandma going all morning filling up the Aebleskiver pans!

Note: Aebleskivers are baked on top of the stove in a special Aebleskiver pan with a hole for each one. Aebleskiver pans may be purchased at most gourmet cookware shops. You can also order from Rasmussens (Not related), P.O. Box 67, Solvang, CA 93463.
